It occurred to me that I ought to offer advice on what you really really really need and what it would be nice to have. Obviously this is all based on my own tastes/habits and if yours are different, alter the lists accordingly. This just gives you a starting point and encourages you to think about it!
Essential equipment.
i.e. stuff I could not function without
A good mixer/blender
A hand held electric mixer
A handheld electric whisk that doesn’t damage non-stick pans (for sauces that might curdle)
A good steamer
A wok
A good large frying pan
A large pan for pasta and a strainer
A small pan for sauces that is never allowed to be used for onion/garlic
Another small pan for stuff with onions in it or for onions e.g. stuffing
A large pan for mince although the wok /frying pan will do
Oven proof dishes and a good roasting tin
Scales
Measuring jug
Rolling pin and pastry board/chopping board - use a large plastic place mat if you want
Sharp knives
A robust grater
Microwave
Skewers
Spoons, spatulas and slotted spoons - all non-stick.
Dishes that are microwave/freezer friendly, both in composition and in size.(Wash and keep those plastic dishes that takeaway Chinese food comes in).
Non-essential equipment
i.e. stuff I’m really glad I’ve got but you can manage without
A garlic press - mine has a thing that removes cherry stones too.
A pastry lattice maker
A citrus reamer
A potato masher
A burger shaper
An electric can opener
A bread making machine
A pineapple peeler/corer
A sharp potato/veg peeler and a firm veg brush
A salad spinner
Mixing bowls
